Watermelon Popsicles

Drescription

Yellow or pink watermelons would both be delicious. A seedless watermelon is easier to blend up, as you don’t need to pick out the seeds (which can add a bitter note if blended).

Ingredients

  • 6 cups cubed watermelon
  • 3 tablespoons sugar
  • 1 tablespoon lime juice
  • 12 freezer pop molds or paper cups (3 ounces each) and wooden pop sticks

Directions

  1. Place watermelon, sugar and lime juice in a high powered blender; puree until smooth. Spoon into molds or paper cups. Top molds with holders. If using cups, top with foil and insert pop sticks through foil. Freeze until firm. To serve, let pops stand at room temperature 5 minutes before unmolding.

Searching for recipes for a gluten-free diet can be challenging during the holidays. Here is a recipe for Irish soda bread that I have adapted over time for St. Patrick's Day. The recipe calls for rice and tapioca flour instead of wheat and it still tastes yummy! Good if wrapped and left overnight, but I think it tastes great right out of the oven. Serve with butter or jam.
