Vanilla Mug Cake

You can either eat the mug cake directly in the mug (especially if your goal is to use the fewest dishes possible!) or scoop it out with a large spoon and serve it on a plate. Plating the cake makes it especially easy to add ice cream, which is always worth the effort.

Ingredients

  • 6 tablespoons 2% milk
  • 2 tablespoons butter, melted
  • 1 large egg yolk, room temperature
  • 1/4 teaspoon vanilla extract
  • 7 tablespoons all-purpose flour
  • 3 tablespoons sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons sprinkles
  • pink vanilla frosting, warmed, optional

Directions

  1. Spray a 16-ounce (2-cup) microwave-safe coffee mug with cooking spray. Combine milk and butter in mug; whisk in egg yolk and vanilla extract. Add flour, sugar, baking powder and salt; stir to combine. Add sprinkles; stir to combine.
  2. Microwave on high until toothpick inserted in center comes out clean, 2-1/2 minutes; mug will be hot. Serve immediately. If desired, drizzle with warmed vanilla frosting and top with additional sprinkles.
