Spiced Plum Pork Chops

Pork chops glazed with a sweet-spicy plum sauce infused with ginger, garlic, and soy. Fruity and bold—this Asian-fusion dish pairs well with rice or stir-fried greens.

Ingredients

  • 4 (3/4 inch thick) boneless pork chops
  • 4 ripe plums, pitted and quartered 3/4 cup pineapple juice
  • 2 tablespoons balsamic vinegar
  • 3 tablespoons brown sugar
  • 1 teaspoon ground cinnamon 1/4 teaspoon ground ginger 1/4 teaspoon ground nutmeg

Directions

  1. Place the pork chops, and plums into a slow cooker. Mix together the pineapple juice, balsamic vinegar, brown sugar, cinnamon, ginger, and nutmeg in a bowl, stirring to dissolve the sugar, and pour the mixture over the pork chops and plums. Cook on Low for 8 hours.
