Soft M&M Cookie Recipe

These Soft M&M Cookies are a fun twist on a classic chocolate chip cookie. They make for a pretty presentation with a terrific texture, too!

Ingredients

  • 8 tablespoons unsalted butter , softened to room temperature
  • ½ cup sugar
  • ¼ cup light brown sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 1/2 cups flour
  • 1 teaspoon baking soda
  • ¼ teaspoon fine sea salt
  • ¾ cup m&ms (no peanuts)

Directions

  1. Preheat the oven to 350°F.
  2. In the bowl of a stand mixer fitted with the paddle attachment or a large mixing bowl using an electric hand mixer, cream together the butter, sugar and brown sugar until light and fluffy. Add the egg and vanilla, mixing until combined.
  3. In a separate large bowl, whisk or sift together the dry ingredients. Gradually add the dry ingredients to the wet ingredients until just combined. Do not overmix.
  4. Fold in the in M&Ms by hand. Cover and chill for 1-2 hours in the fridge.
  5. Scoop 2 tablespoonfuls of batter, rolling it into about 2 inch balls. The batter will resemble playdough and should not be sticky after chilling. Chill the dough between batches.
  6. Arrange the cookie balls on a baking sheet lined with parchment paper at least 2 inches apart. Don’t press down!
  7. Bake for 10-12 minutes (the time varies due to different ovens).
  8. Remove and cool on the sheet for 2-3 minutes before transferring to a wire cooling rack.
