Salmon and Scrambled Eggs

This filling scramble is as easy as it is delicious.

Ingredients

  • ½ pound skinless salmon fillets, cut into large cubes
  • 2 teaspoons olive oil
  • salt and pepper
  • 6 beaten eggs
  • 2 tablespoons heavy cream
  • 1 tablespoon chopped fresh dill, plus more for serving
  • toast (for serving)

Directions

  1. Heat oil in a nonstick skillet over medium-high heat. Add salmon, season with salt and pepper, and cook, turning occasionally, until opaque throughout, about 5 minutes.
  2. Reduce heat to medium. Add eggs and cream and season with salt and pepper. Cook, stirring, until eggs are just set. Stir in dill and serve with toast.
