Ranch, Bacon, and Parmesan Pasta Salad

This ranch, bacon, and Parmesan pasta salad recipe makes a great side dish for summer picnics. I made this on accident when I put some soup ingredients into the bowl instead of the stock pot. I doctored it up and added other ingredients, and voila! Use your favorite pasta shape.

Ingredients

  • 1 (16 ounce) package farfalle (bow tie) pasta
  • 6 strips bacon
  • 1 cup prepared ranch dressing
  • 1 red onion, diced
  • 1 carrot, peeled and diced
  • 1 stalk celery, diced
  • ½ cup shredded parmesan cheese

Directions

  1. Bring a large pot of lightly salted water to a boil. Cook farfalle at a boil, stirring occasionally, until tender yet firm to the bite, about 12 minutes. Drain; rinse with cold water until cool. Transfer to a large bowl; refrigerate until ready to use.
  2. Meanwhile, cook bacon in a large skillet over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain on a paper towel-lined plate. Chop when cool.
  3. Combine dressing, bacon, red onion, carrot, celery, and Parmesan cheese in a large bowl; stir in pasta to coat. Refrigerate to blend flavors, about 2 hours.
