Radish Celery & Cucumber Salad

Ingredients

  • 1 english cucumber, very thinly sliced
  • 3 stalks celery, very thinly sliced, plus celery leaves for garnish
  • 4 medium radishes, very thinly sliced
  • 3 tablespoons extra-virgin olive oil
  • 1 teaspoon grated lemon zest
  • 2 tablespoons lemon juice
  • ¼ cup freshly grated parmesan cheese
  • ½ teaspoon flaky sea salt, such as maldon
  • ¼ teaspoon ground pepper

Directions

  1. Combine cucumber, celery and radishes in a large bowl. Whisk oil and lemon juice in a small bowl or combine in a half-pint mason jar.
  2. Just before serving, drizzle the dressing over the salad. Serve sprinkled with lemon zest, cheese, salt and pepper. Garnish with celery leaves, if desired.
