No-Bake Chocolate Cheesecake

Using a premade crust, the ultra creamy No-Bake Chocolate Cheesecake uses just 5 ingredients and takes minutes to prepare. Make ahead and take to your next party!

Ingredients

  • 10 ounces cream cheese , room temperture, full fat preferred
  • 1 teaspoon vanilla extract
  • 4 ounces semi-sweet chocolate , broken into pieces
  • 1 tablespoon salted butter
  • 1 1/2 cups powdered sugar
  • 8 inch graham cracker pie crust
  • whipped cream optional for garnish and serving
  • vanilla bean ice cream optional for garnish and serving

Directions

  1. In the bowl of a stand mixer fitted with the whisk attachment or in a medium mixing bowl with an electric hand mixer, beat the cream cheese until light and fluffy, approximately 3-4 minutes. Add the vanilla, continue mixing. Set aside.
  2. Place the butter and chocolate in a microwave safe dish. Microwave on high for 30 seconds, stir. If it is not fully melted, heat at additional 15 second increments, stirring between each.
  3. When the chocolate mixture is fully melted and smooth, immediately combine with the cream cheese mixture, mixing well until no streaks remain.
  4. Blend in the powdered sugar until just mixed.
  5. Evenly spread the cheesecake mixture into the graham cracker crust. Cover and refrigerate until ready to serve.
  6. Serve with whipped cream and vanilla bean ice cream.
