Mississippi Mud Cake

Fudgy, gooey and beloved all over the South, Mississippi mud cake is a crowd-pleasing chocolate dessert that wins hearts wherever it goes.

Ingredients

  • 1 cup butter, melted
  • 2 cups sugar
  • 4 large eggs, room temperature
  • 2 cups all-purpose flour
  • 1/2 cup baking cocoa
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 package (10 ounces) miniature marshmallows
  • 1/2 cup butter, softened
  • 5 tablespoons baking cocoa
  • 4 cups confectioners' sugar
  • 6 tablespoons whole milk

Directions

  1. Preheat oven to 375°. In a large bowl, combine butter and cocoa. Beat in sugar on medium speed until smooth, 1-2 minutes. Beat in eggs, one at a time, until fluffy, 2-3 minutes. Stir in vanilla extract until incorporated.
  2. In a small bowl, whisk together flour, baking powder and salt. Add dry ingredients to bowl until just combined. Transfer batter to a greased 13x9-in baking dish.
  3. Bake until a toothpick inserted into the center comes out clean, 25-30 minutes. Sprinkle mini marshmallows evenly over cake. Return pan to the oven; let sit 2-3 minutes (with oven off) until marshmallows have melted. Let cool completely.
  4. Meanwhile, in a large bowl, beat softened butter and cocoa over medium-high speed until smooth, 2-3 minutes. Slowly add confectioners' sugar, beating over medium-low speed. Beat in milk; whisk until fluffy, 2-3 minutes. Spread frosting carefully over marshmallow layer. Slice and serve.
