Leafy Green Salad

This simple green salad is made with romaine lettuce and baby spinach and can be thrown together in minutes to round out any meal.

Ingredients

  • 2 cups torn romaine lettuce
  • 2 cups fresh baby spinach
  • ½ cup thinly sliced red onion
  • ½ cup thinly sliced fresh mushrooms
  • 3 tablespoons balsamic vinegar
  • 1 tablespoon olive oil

Directions

  1. In a salad bowl toss together romaine lettuce, baby spinach, red onion and mushrooms. In a screw-top jar combine balsamic vinegar and olive oil. Shake to mix. Drizzle over the salad and toss to coat.
