Ingredients

  • 1¼ cups old-fashioned rolled oats
  • 1 cup chopped pitted dates (about 8 whole dates)
  • ¾ cup smooth natural almond butter
  • ¼ cup chopped unsalted raw cashews
  • 2 tablespoons chia seeds
  • 2 tablespoons pure maple syrup
  • ½ teaspoon ground cardamom
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground cinnamon
  • ⅛ teaspoon salt
  • 2 tablespoons hulled hemp seeds

Directions

  1. Combine 1¼ cups oats, 1 cup dates, ¾ cup almond butter, ¼ cup cashews, 2 tablespoons chia seeds, 2 tablespoons maple syrup, ½ teaspoon cardamom, ½ teaspoon ginger, ¼ teaspoon cinnamon and ⅛ teaspoon salt in a food processor. Pulse until finely chopped, 10 to 12 pulses, then process until the mixture is crumbly but can be pressed to form a cohesive ball, about 1 minute, stopping to scrape down the sides as needed. Add 2 tablespoons hemp seeds and pulse until mixed, 1 to 2 pulses.
  2. Using wet hands to prevent the mixture from sticking, squeeze, press and roll the mixture into 24 balls (about 1½ tablespoons each). Place the balls in a single layer on a parchment paper–lined baking sheet. Let rest at room temperature for 15 minutes before serving.
