Carrot Potato Gratin

This carrot potato gratin is nicely cheesy, and really tasty. You'll love the combination of sweet carrots and potatoes, and it is a pretty, golden-brown gratin.

Ingredients

  • 1 1/2 pounds carrots, peeled and thinly sliced crosswise
  • 1 1/2 pounds yukon gold potatoes, peeled and thinly sliced crosswise
  • 8 ounces gruyere or white cheddar cheese, shredded, divided
  • 1/2 cup grated parmesan cheese
  • 1 tablespoon chopped fresh thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/8 teaspoon ground nutmeg
  • 1 cup heavy cream

Directions

  1. In a large bowl combine carrots, potatoes, 1 1/4 cups Gruyere cheese, the Parmesan, thyme, salt, pepper, and nutmeg. Toss to combine.
  2. Spread in prepared baking dish.
  3. Pour cream evenly over carrot mixture. Cover with foil.
  4. Bake in the preheated oven for 1 hour and 15 minutes. Remove foil.
  5. Sprinkle with remaining 3/4 cup Gruyere cheese.
  6. Bake, uncovered, until golden brown and vegetables are fork tender, 30 to 40 minutes. Let stand 10 minutes before serving.
