Bread Maker Doughnuts

Drescription

I finally found a good doughnut recipe! These light and fluffy doughnuts are made with a yeast dough that's prepared in a bread machine. When the doughnuts have cooled slightly, top them with sugar, chocolate, or your other favorite ingredients.

Ingredients

  • ½ cup warm milk
  • ½ large egg, beaten
  • ¼ cup butter
  • 2 cups all-purpose flour
  • ¼ cup white sugar
  • 1 teaspoon salt
  • 1 teaspoon active dry yeast
  • 8 cups vegetable oil for frying

Directions

  1. Place milk, egg, butter, flour, sugar, salt, and yeast into a bread machine in the order listed, or follow the order recommended by your manufacturer if different. Run Dough cycle.
  2. Remove dough from the machine after the cycle is done, about 90 minutes.
  3. Knead dough a few times on a floured work surface to collapse all the bubbles. Cut dough into 16 pieces. Cover with a damp cloth and let rest for 20 minutes.
  4. Stretch each ball out into a 1/4-inch-thick disk. Use a small cutter to cut a hole in the center of each disk. Let doughnuts rise on the floured surface until doubled in size, 30 to 40 minutes.
  5. Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
  6. Working in batches of 2 to 3, gently place doughnuts into hot oil; fry until they float to the top and turn golden brown, about 3 minutes. Flip doughnuts and repeat on the other side. Drain on paper towels.

Russian Buttermilk Pancakes

This is a family recipe that my grandmothers and mom have been making me for years. Now that I'm an adult (and live in a different city) I make these for myself and my fiance. One day, while making them, I decided to separate the yolks from the whites, and I never looked back. The new pancakes is even more delicate than its previous version and its mild sweetness makes it good enough to eat on its own. Though I've been known to make a brown butter/maple syrup concoctions out of them.

Pickle Sub Sandwiches with Turkey & Cheddar

Cut down on carbs by swapping out the bread for slices of pickle to make these fun turkey and Cheddar sandwiches. Roma tomatoes are the perfect oblong shape for these mini sandwiches but feel free to use regular tomatoes—simply cut the slices in half so they fit nicely on the pickle sandwich. These sandwiches are an easy lunch, but they're also great on a party tray for a casual get-together.
