Best Zucchini Bread

This zucchini bread recipe is the best I have made. I have tried other recipes, but this remains the best. Thanks to my mother!

Ingredients

  • 3 large eggs
  • 2 cups white sugar
  • 1 cup vegetable oil
  • 2 cups grated zucchini
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • ½ cup chopped walnuts
  • 1 tablespoon ground cinnamon
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • ¼ teaspoon baking powder

Directions

  1. Gather the ingredients. Preheat the oven to 325 degrees F (165 degrees C). Grease and flour two 8x4-inch loaf pans.
  2. Beat eggs in a large bowl until light and frothy. Add sugar and oil; mix until well combined. Stir in zucchini and vanilla.
  3. Combine flour, nuts, cinnamon, salt, baking soda, and baking powder; stir into egg mixture until incorporated. Divide batter into the prepared pans.
  4. Bake in the preheated oven until a toothpick inserted into the center of each loaf comes out clean, 60 to 70 minutes.
  5. Slice and serve.
