Almond Blondies

These make a nice change from the typical chocolate brownie. When I bake up a batch, they disappear quickly at my house.

Ingredients

  • 2 large eggs, room temperature
  • 1/2 cup sugar
  • 1/2 cup packed brown sugar
  • 1/3 cup butter, melted
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 1-1/3 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup chopped almonds

Directions

  1. Preheat oven to 350°. In a large bowl, beat the eggs, sugar and brown sugar for 3 minutes. Add butter and extracts; mix well. Combine the flour, baking powder and salt. Gradually add to the creamed mixture, beating just until blended. Fold in almonds.
  2. Pour into an 8-in. square baking pan coated with cooking spray. Bake until a toothpick inserted in the center comes out clean, 25-30 minutes. Cool on a wire rack. Cut into squares.
