Air fryer Zucchini No Breading

This zucchini in air fryer no breading recipe is really delicious and easy to make. It is a perfect vegetable side and a healthy way to make your entire family eat this vegetable.

Ingredients

  • 2 zucchini about 1 lb. or 500 gm.
  • 1 tbsp. olive oil
  • 1 tsp. garlic powder
  • 1 tsp. pepper
  • salt to taste

Directions

  1. Cut zucchini into even bite-sized pieces and set aside. I have cut zucchini into half moon and then halved them further.
  2. These are not thin as chips or batons like fries. Though you can do those shapes as well. Time varies depending upon the shape. No need to peel the skin.
  3. Mix together garlic powder, pepper powder and salt.
  4. Coat the zucchini with the spice mix. Spray with olive oil or add olive oil and mix well.
  5. If you are looking for low oil cooking then skip oil and just sprinkle a few drops of water on the zucchini to allow the spices to adhere to it.
  6. Preheat air fryer at 390F or 200C for 5 minutes.
  7. Put in the cut zucchini with spice mix in the basket. Air fry at 390F for 5-6 minutes till it looks nicely roasted and is cooked.
  8. You can shake the basket midway for even cooking. The zucchini pieces shrink slightly on cooking.
  9. I did 2 batches of cooking and the second batch took me about a minute less of air frying time.
  10. Pretty quick and easy way to make delicious roasted zucchini without breadcrumbs in air fryer.
  11. You can make zucchini fries with the same recipe. The cooking time will be more as batons are larger in size.
  12. Serve it as a vegetable side and enjoy your healthy treat.
