Air Fryer Chicken Cutlets

Cooking chicken cutlets in an air fryer creates a crunchy, golden-brown exterior while eliminating excess oil. Serve the crispy cutlets with a side salad.

Ingredients

  • 1 cup whole-wheat or gluten-free panko breadcrumbs
  • ¼ cup grated parmesan cheese
  • 1 tablespoon olive oil
  • 1 teaspoon grated lemon zest
  • ½ cup whole buttermilk
  • 1 pound chicken breast cutlets (4 cutlets)
  • ½ teaspoon salt
  • ½ teaspoon ground pepper

Directions

  1. Combine panko, Parmesan, oil and lemon zest in a shallow dish. Pour buttermilk into another shallow dish.
  2. Preheat air fryer to 375°F for 5 minutes. Coat the basket with cooking spray. Sprinkle chicken with salt and pepper. Dredge in the buttermilk, letting excess run off. Dredge in the panko mixture, pressing to adhere. Place in the basket, in batches if necessary, and cook until golden brown and a thermometer inserted in the thickest part reaches 165°F, about 5 minutes on each side.

Bring a large pot of water to a boil. Cut zucchini into long thin strips with a spiralizer or vegetable peeler. Place in a colander set over a large bowl. Toss with 1/4 tsp. salt and let drain for 15 to 20 minutes. Meanwhile, pulse almonds in a food processor until coarsely chopped. Transfer to a plate and use a fork to gently flake it apart. Add the pesto to the spaghetti mixture; toss to coat. Gently stir in the salmon. Top with the remaining 1/4 cup chopped fresh basil. Garnish with Parmesan and additional pepper, if desired.
