Air Fryer Chewy Oatmeal Raisin Tahini Cookies

We put a twist on a classic oatmeal-raisin cookie with the addition of tahini and walnuts. Tahini adds a hint of salty, nutty flavor, while toasted walnuts bring a satisfying crunch.

Ingredients

  • 1 cup old-fashioned rolled oats
  • ¼ cup whole-wheat pastry flour
  • ¼ cup all-purpose flour
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ¼ cup tahini
  • 2 tablespoons unsalted butter, softened
  • ⅓ cup granulated sugar
  • ⅓ cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ cup raisins
  • ¼ cup chopped walnuts, toasted (see tip)

Directions

  1. Cut a piece of parchment paper to fit the basket of an air fryer.
  2. Whisk oats, pastry flour, all-purpose flour, cinnamon, baking soda and salt in a medium bowl. Beat tahini and butter in a large bowl with an electric mixer until blended into a paste. Beat in granulated sugar, brown sugar, egg and vanilla. Stir in the oat mixture until just moistened. Stir in raisins and walnuts.
  3. Drop 4 to 6 dough balls, about 1 rounded tablespoon each, 2 inches apart on the prepared parchment. Using damp hands, flatten each dough ball slightly.
  4. Carefully transfer the parchment with the dough balls to the air-fryer basket. Cook at 360℉ until golden, 6 to 7 minutes. Remove with a wide spatula to a wire rack to cool. Repeat with the remaining dough.
